• 2 slices of bread
• 2 eggs, separated
• salt and pepper
• bacon (optional)
1. Heat large pan over medium heat. Butter one side of the bread and toast on pan until golden. Remove from heat and butter the other side. Using a sharp knife cut a heart-shaped hole in each piece of toast. In two bowls, separate your egg whites and egg yolks.
2. Place the bread pack on the pan, buttered side down. Pour just enough egg whites into the hole of your bread to fill the bottom, and then put one egg yolk on top of each. Cover the toast and eggs using another pan or foil for 3-4 minutes, or until the egg has cooked through. Remove from pan, season with salt and pepper and serve with bacon.
